Servings:
- Melt butter in a large saucepan over medium heat. Add the garlic, onion, red bell pepper and grated carrots. Cook until the vegetables are soft, about 4 minutes. Add the rice and cook, stirring, about 1 minute.
- Increase the heat to medium-high, add the stock and bring to a boil. Reduce the heat to low, cover and simmer until the rice is tender, about 15 minutes. Add the crushed tomatoes,1/2 cup of water, shrimp and peas.
- Cook, stirring occasionally, for 5 minutes more. Season with salt and pepper. Sprinkle fresh cilantro and serve immediately.

Medium Red Potatoes Quartered

Pitted Kalamata Olives Slices

Capers Rinsed

Oregano Fresh or Diced

Servings:
- Preheat oven to 400 degrees.
- Toss potatoes in a bowl with 1 tbsp olive oil, 1/4 tsp oregano, salt and pepper. Place in a small roasting pan and roast for 20 minutes.
- Add the chopped tomatoes to the garlic and oil. Allow the tomatoes to come to a simmer, then add the sliced olives and capers, the rest of the oregano, salt, pepper, and two of the torn basil leaves; cook for 2 more minutes.
- When the potatoes have roasted for 20 minutes, clear a space in the center of the pan and add the cod. Cover with tomato sauce and roast with the potatoes for 20 more minutes.
- Remove from oven, divide between two plates, garnish with the remaining fresh basil leaves and serve.

- Heat olive oil in a large skillet over medium-high heat. Sauté onion until translucent, then add garlic.
- Place tilapia in the skillet and cook until the fish starts to flake. Add jalapeño peppers, tomatoes, cilantro and lime juice. Sauté for about 5 minutes, breaking up the fish with a spoon to get everything mixed well. Season to taste with salt and pepper.
- Heat tortillas in a skillet for a few minutes on each side. Serve tilapia in warm
- tortillas, topped with a slice or two of avocado and a fresh squeeze of lime.

Servings:
- Add salmon to food processor and pulse until it’s somewhat ground.
- Remove ground salmon and add it to a large bowl with the remaining ingredients (except for buns!) and mix with a spoon until just combined.
- Form into 4 equally-sized burgers. Heat a skillet or grill over medium-high heat and cook burgers for 3-4 minutes per side, until golden brown.
- Serve on whole wheat buns, topped with additional BBQ sauce and toppings. Enjoy!
